Steamed Pork Patty with Water Chestnut

This is a simple meaty dish you can prepare in 30mins. The juicy pork patty with crunchy bits of water chestnut and the lovely meat broth resulted in the dish would pair well with steamed veggies and rice.

Serve 2

Ingredients you will need

200g minced pork (ideally with 20% fat content, or more)

75g water chestnut, peeled and chopped into small dices

goji, to garnish (optional)

light soy sauce, to garnish (optional)


Marinade for minced pork

2 tsp light soy sauce

1 tsp pepper

1 tsp salt

2 tsp corn flour

1 tsp cooking oil


To serve

steamed Jasmin rice

Equipment

steaming rack/bamboo steamer


Instruction

  1. Marinade the pork and keep stirring in single direction vigorously until the pork mixture turns into a sticky and mushy paste.

  2. Pad dry the peeled water chestnuts and chopped into small dices.

  3. In a heatproof dish, spoon the pork mixture in it, flatten and shape into a patty (< 2cm thick) with the back of a spoon. Garnish with a few goji berries. *Try not to make the patty too thick, otherwise the centre of the patty may be undercooked*

  4. Make sure you leave at least 2cm gap from the edge of the plate as the patty will release some juice (like a broth) after steamed.

  5. Fill a wok with 1/3 water and place a steaming rack in it, bring to boil.

  6. Place the dish with patty on the steaming rack, cover with a lid and steam for 10-12mins until the patty is cooked through.

  7. Turn off the heat, let the dish to set for 2-3mins, so the patty would re-absorb the broth🤤

  8. Garnish with soy sauce if wished, serve hot.
