I love baking cheese scones and mixing in different herbs and maybe even salmon flakes😆because ...why not? Savoury scones are the best! I will share my favourite Cheddar, Salmon and Dill Scones recipe with some updated photos later.
For now, let's get ready to bake some Spinach and Cheese Scones💖
Ingredients you will need
225g Plain Flour, plus some extra for dusting
50g Butter, cut into small cubes
3 tsp Baking Powder
2 tbsp Caster Sugar
1/2 tsp Salt
1 Egg
100ml Milk
50g Frozen Spinach Cubes, defrosted and chopped
100g Shredded Cheddar Cheese
For glazing
1 Beaten Egg
Instruction
1. Preheat oven to 200°C
2. Put the flour, baking powder, sugar and salt in a large mixing bowl
3. Add butter cubes, the rub in with your fingers until the mix looks like fine crumbs
4. Beat 1 egg and milk together in another bowl
5. Mix the dry ingredients with the egg mixture to form a dough* on a lightly floured work surface
6. Mix in spinach and cheese in the dough
7. Gently roll the dough to 2cm thickness on the floured work surface
8. Cut out the scones with a 5cm cutter and brush the tops with a beaten egg
9. Place the scones on a baking paper lined tray
10. Bake for 12-15 mins until risen and golden on the tops
Allow to cool slightly on a rack before serving.
*Top tip: It’s important not to overwork the dough or the scones will become very dense in texture
