150g baby spinach
2tbsp double cream
2 tsp olive oil
2tsp butter
dried parsley
For salmon seasoning
Salt and pepper
Instruction
- Rub the fillets with olive oil, a handful of salt and pepper, then marinate them for 10 mins.
- Meanwhile, cook the pasta in boiling water for 7 mins until al dente (or according to the packet cooking instruction) .
- Drain the pasta and reserve 1/4 cup of pasta cooking water.
- Place a large non-stick frying pan over medium-high heat, add the fillets, skin side down (this will be your “presentation side”😉you can do it the other way around).
- Cook the presentation side for 3-4 minutes then flip and cook for a further 3 minutes. Pan-sear the sides of the fillets for 1 min each if your salmon fillets are the thick ones. Transfer the fillets to a warmed plate.
- Add the spinach in a frying pan with double cream and a bit salt, cook for 2-3 minutes on high heat.
- Meanwhile, add the pasta, 1/4 cup of pasta water, butter, and a pinch of salt in a saucepan, stir over medium heat.
- Gently toss the pasta about 1-2 minutes until they are well combined, transfer them to serving dishes, garnish with dried parsley (or any herbs you like!).
- Add the spinach as side and place the Salmon fillet on top.
