Easy Pan Seared Creamy Chicken Mushroom and Spinach Pasta

Pan seared chicken chunks and mushrooms with pasta soaked in a rich and creamy cheese sauce😋

Ingredients you will need

200g dried pasta

200g chicken thigh fillets, cut in strips/chunks

200g mushroom

100g spinach

5g fresh parsley, chopped

3-4 sprigs thyme

50g parmesan cheese, grated

100ml single cream

1 tbsp cooking oil

a pinch of salt and pepper, to season

Seasoning for chicken

1-1/2 tsp salt

1 tsp ground black pepper

2 tsp garlic powder

1 tsp cooking oil


  1. Cook the pasta in boiling water according to the pack instruction until al dente.

  2. Drain the pasta and reserve 1/4 cup of pasta cooking water.

  3. Heat the oil in a large frying pan over high heat, add the mushrooms, chicken fillet strips with seasonings, cook for 5-7 mins until fragrant and the surface browned.

  4. Add the pasta, pasta water, single cream to the pan, gently toss and simmer for 3-4 mins until most liquid is reduced.

  5. Add spinach, thyme, parsley and grated cheese to the pan, cook for another 2 mins, season with a pinch of salt and pepper if desired.

  6. Garnish with some extra cheese and herbs (optional), serve hot.
