Easy Stir Fry Egg Noodles Chowmein with Chicken


This Chowmein is my lazy go-to dinner option when I want to have something hot and hearty ready in just 15mins😉

Ingredients you will need

80g dried egg noodles

1 chicken thigh fillet (~100g), sliced in thin strips

100g pre-packed stir fry vegetable mix* (I got mine from Tesco)

a pinch of salt and pepper

1 tsp oyster sauce

1 tsp dark soy sauce

corianders, to garnish (optional)

Seasoning for chicken

1 tsp dark soy sauce

1 tsp light soy sauce

1/2 tsp salt

Instruction

  1. Cook the egg noodles in boiling water for 3-4 mins until al dente (or according to the packet cooking instruction) then drain the water.

  2. Heat a frying pan/wok over medium-high and pan fry the chicken fillet strips with the seasoning until the surface is slightly browned.

  3. Put aside the chicken and add the vegetable mix, keep stir frying for 3-4 mins over medium-high.

  4. Add the noodles, oyster sauce, dark soy sauce, salt and pepper.

  5. Stir fry for another 1-2 mins until the noodles are tender.

  6. Garnish with corianders, serve hot.

*You can subtitle this with beansprouts, cabbage, carrot and bell pepper, all cut in thin strips.
