Crispy Pan Fried Potatoes with HerbsđŸ’–đŸ„”


Pan fried potatoes have been underrated for ages! This golden potato bites seared with herby crusty edges will make the best side dish for any dinner🙌

Ingredients you will need

2 medium baking/starchy potatoes, cut into bites/small chunks

2 tbsp cooking oil


Seasoning coat for potatoes

1/2 tsp dried thyme

1/2 tsp dried oregano

1/2 tsp rosemary

1/2 tsp garlic powder

1 tsp salt

1/2 tsp ground black pepper

1 tbsp flour

Instruction

  1. Cook the potato chunks in boiling water in a saucepan for 5-7 mins until they become slightly soften but not yet mushy. (Depends on the cut-size and the potato type, you can think of al dente in pasta cooking as reference😂)

  2. Drained the water and add all the seasonings in the saucepan, gently toss to coat the potato chunks.

  3. Heat the cooking oil in a large frying pan over medium-high, add the lightly coated potato chunks in the pan. Shake off any flour lumps/excessive flour before adding.

  4. Pan fry the chunks for 8-10 mins until the surface turns golden and crispy.
