A fragrant mix of seafoods and herbs cooked with cherry tomatoes for a refreshing taste, perfect for dinner in a hurry.
Ingredients you will need
150g frozen cooked seafood mix, defrosted and drained
200g linguine/ spaghetti (or any pasta preferred)
150g cherry tomatoes, halved
20g fresh parsley, chopped
1 tsp dried oregano
2 tbsp tomato paste
2 cloves of garlic, minced
1 tsp salt
a pinch of ground black pepper
2 tsp olive oil
1 lemon, cut into wedges, to serve
Cook the pasta in boiling water according to the pack instruction until al dente.
Drain the pasta and reserve 1/4 cup of pasta cooking water.
Meanwhile, heat the oil in a large frying pan over medium-high heat, add the garlic and seafood, cook for 2 mins until fragrant.
Add the pasta, pasta water, cherry tomatoes, tomato paste, oregano, salt and pepper, gently toss and simmer for 3 mins until all liquid is reduced.
Garnish with some extra chopped parsley (optional) and serve hot.
